Grated citrus peel, also called zest, contains natural oils that can add intense flavor to grilled meat, fish, poultry, and vegetables. Grated citrus peel does not have the slightly harsh acidic quality of the juice; instead, like salt, it helps punctuate the natural flavor of a food.

Add grated peel generously to dressings, marinades, basting sauces, and rubs. Add peels to white wine vinegar with fresh herbs to make citrus-flavored vinegars. be sure to grate only the outter, colored portion of the peel because the pith, the white layer underneath the peel, imparts bitterness.

You can even throw whole peels directly into the coals to create flavorful smoke when grilling pork, fish, or lamb.
