After School Cookies

Ingredients:

1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 1/2 cups all-purpose flour
1 (3.4-ounce) package instant vanilla pudding mix
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 cup nuts, chopped

Method:

Step 1 - Preheat the oven to 375 degrees F.
Step 2 - In a large mixing bowl, add the butter, the sugar, and the brown sugar and beat with an electric hand mixer until light and fluffy.
Step 3 - Beat the eggs and the vanilla into the butter mixture.
Step 4 - In a medium bowl, combine the oats, the flour, the pudding mix, the baking soda, and the salt.
Step 5 - Gradually add the oat mixture to the butter mixture and mix well.
Step 6 - Add the chocolate chips and the nuts to the dough mixture and stir to combine.
Step 7 - Drop the dough in level tablespoonfuls 2-inches apart onto ungreased baking sheets.
Step 8 - Bake the cookies until they are lightly browned, about 10 to 12 minutes.
Step 9 - Transfer the cookies to wire racks to cool.
Step 10 - Serve.
