2 1/2 cups flour
1 tsp. baking powder
3/4 cup shortening
1 1/2 cups sugar
2 eggs
1/4 cup buttermilk
1 tsp. vanilla
1 1/4 cups mashed ripe bananas
Combine dry ingredients & set aside. Cream shortening, sugar & eggs. In a
separate bowl, combine flour and baking powder. Add to shortening mixture. Add
buttermilk, mashed bananas and vanilla. Beat all ingredients together at medium speed for about 2 minutes.
Use for cupcakes, a layer cake or a 9 inch by 13 inch sheet cake. Bake at
375 degrees 25 to
30 minutes for cakes, 20 minutes for cupcakes. Frost with
creamy vanilla frosting.
