Coffee Cake
2 c. all purpose flour
2 and 1/2 tsp. baking powder
1/4 c. butter, softened
1/2 c. brown sugar
1/2 c. sour cream
1/4 c. caramel topping
1/4 c. milk
1 egg
1 tsp. vanilla
2 c. peeled, chopped apples
Crumb Topping
1 c. brown sugar
2/3 c. flour
6 Tbsp. softened butter
*caramel topping for drizzling
1. In a medium bowl, combine 2 c. flour and baking powder. Set aside.
2. In a medium mixing bowl, cream butter and brown sugar.
3. Blend in sour cream, caramel topping, and milk and mix until smooth.
4. Add dry ingredients and mix just until blended.
5. Fold in apples.
6. Spoon batter into a 10 inch springform pan and sprinkle with crumble topping (see below).
7. Bake at 350 degrees for 50 to 60 minutes or until center is set and top is golden brown.
8. Remove from oven and cool.
9. Drizzle with caramel topping before serving.
Crumble Topping
1. Combine 1 c. brown sugar, ⅔ c. flour in a bowl.
2. Cut in 6 Tbsp. softened butter until mixture is crumbly.
