Fresh Strawberry Pie

Ingredients:

1 baked pie shell
1 quart strawberries
1 Tablespoon lemon juice
1/2 cup sugar
1 Tablespoon cornstarch


Method:

Wash & hull strawberries. Either leave berries whole or cut them in half,
depending on their size. Crush 1 cup strawberries in a food processor or blender. Add lemon juice, sugar, & cornstarch. Cook over low heat, stirring until thick and clear. Remove from heat & cool. Combine cooled mixture with the remaining strawberries. Spoon into an unbaked pie shell. Chill 1 to 2 hours. Just before serving top with whipped cream or whipped topping.

Note. The Pat a Pie Pastry crust will work well with this recipe.
