PINEAPPLE ZUCCHINI BREAD

Ingredients:

1 (8 oz.) can crushed pineapple with syrup
3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 cup chopped pecans (optional)
3/4 cup vegetable oil
3 eggs
2 cups sugar
2 tsp. vanilla
3 cups unpeeled, raw, shredded zucchini

Method:

Combine flour, baking powder, baking soda, cinnamon,
nutmeg and pecans in mixing bowl. In second bowl, mix 3 eggs,
2 cups sugar and 2 teaspoons vanilla. Then add 3/4 cup vegetable oil and 3
cups unpeeled, raw, shredded zucchini. Stir this
mixture into the dry ingredients. add the pineapple and syrup to batter and blend. Put into 2 greased loaf pans. Bake at 350 degrees for forty to sixty minutes. Cool 10 minutes. (Serve warm with butter or plain or cold!)
