2 cups sugar
2 teaspoons vanilla
2 teaspoons butter
2 1/2 teaspoons baking soda
1 cup white corn syrup
3 cups salted peanuts
Mix together sugar and syrup in large casserole oven proof dish. Microwave
for 6 minutes; add peanuts; microwave 5-6 more minutes, or until mixture
just begins to get a beige tint. Add butter and vanilla, blend well. Microwave 1 1/2 to 2 minutes. Using a very large spoon, add baking soda and gently stir until light and foamy. Pour mixture on 2 lightly greased cookie sheets and flatten with spoon. Cool 30 to 60 minutes. When cool, break into
small pieces and store in an air tight container. .
Makes 2 pounds
Notes: Times given in this recipe are for a 650 watt microwave, you may
need to adjust times up or down according to the wattage of your microwave.
Freezing the peanut brittle before consuming seems to improve the texture.
