1 cup (227g) butter, softened
1 cup (200g) granulated sugar
1 cup (200g) brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups (375g) all-purpose flour
1/2 cup (59g) cocoa powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
36 whole peppermint patties, mini or regular-sized
1 tablespoon confectioners sugar, for dusting
1. Preheat oven to 350°F. Line a cookie sheet with parchment paper.
2. Using a stand mixer, beat the butter, brown sugar, and granulated sugar in a large bowl.
3. Add in the eggs and vanilla extract. Beat until eggs are incorporated. Scrape down the sides of the bowl and mix in any remaining egg.
4. In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt. Whisk to combine.
5. Add the flour mixture into the wet ingredients and beat until the flour is just worked in.
6. Using a 2 tablespoon cookie scoop, scoop the cookie dough and place it about 2 inches apart on the prepared cookie sheet. Flatten gently.
7. Place an unwrapped peppermint patty in the middle of each cookie.
8. Bring the dough up around each peppermint patty, completely covering the patty.
9. Place the cookies on your prepared baking sheet. Chill for 20-30 minutes.
10. Bake for 10-12 minutes making sure to not over-bake.
11. Remove the cookies from the oven and let cool completely. Sprinkle the confectioner's sugar over the cookies.
