Pineapple Cookies

Ingredients:

1/2 cup shortening

1/2 cup brown sugar

1/2 cup sugar

1 egg, well beaten

1/2 cup drained crushed pineapple

1 teaspoon vanilla

1/4 teaspoon salt

2 cups all-purpose flour

1/4 teaspoon baking soda

1 teaspoon baking powder

1/2 cup broken nuts

Method:

Preheat oven to 425 degrees.

In bowl, combine shortening, brown sugar and sugar. Beat with mixer until creamy.

Add egg and pineapple, mix thoroughly.

Add vanilla and salt.

In another bowl, sift together flour, salt, baking soda and baking powder.

Add to sugar mixture.

Add nuts, mix well.

Drop by spoonfuls onto greased cookie sheet. Bake for 10 minutes.
