2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 lb. cooked pumpkin - either canned or cook & strain fresh pumpkin
2/3 cup water
3 1/3 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
2/3 cup chopped nuts
2/3 cup raisins
Cream shortening & sugar till light & fluffy. Stir in eggs, pumpkin & water.
Blend in flour, soda, salt, baking powder & cinnamon. Stir in nuts & raisins. Pour into 2 large or 3 small loaf pans.
Bake at 350 degrees for 60 to 70 minutes, or until a pick inserted in center
comes out clean.
