Rattlesnake Bites

Ingredients:

4 cups pepper jack cheese, shredded
2 jalapeños, seeded and diced
olive oil, to taste, for frying
1/2 cup flour
1 egg
1 cup milk
1 1/2 cups breadcrumbs
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon garlic powder

Method:

Step 1 - In a large bowl, add the pepper jack cheese and the jalapeños and stir to combine.
Step 2 - Shape the jalapeño mixture into 1-1/2-inch-thick balls.
Step 3 - Place the balls back into the bowl and freeze until chilled, about 30 minutes-1 hour.
Step 4 - Once the balls have chilled, in a deep pot, heat the oil to 350 degrees F.
Step 5 - In a bowl, add the flour.
Step 6 - In a small bowl, add the egg and the milk and whisk to combine.
Step 7 - In a third bowl, combine the breadcrumbs, the cayenne pepper, the paprika, and the garlic powder.
Step 8 - Roll the balls, one at a time, in the flour, the egg mixture, and then the breadcrumb mixture.
Step 9 - Place a few of the balls at a time in the oil and fry until golden and crispy, about 3 to 4 minutes. Repeat until all of the balls are fried.
Step 10 - Transfer the bites to a paper-towel-lined plate to drain.
Step 11 - Serve.
