3 tablespoons butter or butter substitute, soften
3 tablespoons brown sugar
� tsp. vanilla
2 egg whites
� cup unbleached flour
1/3 cup oat bran
� tsp. baking soda
�  tsp. salt
� cup chopped dried apricots
Cream butter and brown sugar.  Stir in egg whites and vanilla.  Set aside.  Combine all ingredients and blend well.  
On a greased cookie sheet drop by 2 tspoonfuls onto  the cookie sheet.  Bake at 375F for 10-12 minutes.
