Cuban crushed potatoes

Ingredients:

4 large potatoes
2 tablespoons chopped parsley
1 small onion, minced
oil

Method:

Cook potatoes in microwave until tender. Cool enough to handle and peel skins.

Place potato between two pieces of wax paper and crush with palm of hand. Transfer to a cookie sheet.

Spray top of potatoes with oil and broil until golden brown. Put on serving plate and top with parsley and onion, salt and pepper.
