1 ½ to 2 lbs. fish and seafood
2 tblsp. olive oil
1 cup fish or vegetable bullion or clam juice
3 garlic cloves, minced
1 bunch scallions, cleaned& chopped
2 shallots, chopped ( optional)
fresh oregano, parsley and basil, chopped
½ cup white wine
1 cup celery, chopped
1 roasted pepper (optional)
¼ cup lemon or lime juice
1 lemon cut into wedges for garnish
1 lb. pasta of your choice
Cut fish into bite size pieces. I like to use a combination of flat fish such as salmon, tilapia or swordfish. This in combination with scallops, clams and shrimp.
Put oil, onion, garlic, pepper and shallots into a sauté pan. Saute until onion is soft. Next put in the fish and seafood and cook for about 6 or 7 minutes.
Add remaining ingredients except lemon wedges and pasta.
Cook for about 5 to 10 minutes.
Cook pasta, drain and put onto a serving platter. Pour seafood over pasta and serve with lemon wedges.
Top with parmesan cheese if desired although cheese is not usually served with an Italian fish dish such as this.
