3/4 cup sugar, divided

3 tablespoons dark rum

1Preheat oven to 350°. In a large bowl, beat butter and 2/3 cup sugar at medium speed until fluffy, 2 to 3 minutes. Add eggs, one at a time, until fluffy and pale in color, 2 to 3 minutes. Beat in dark rum and vanilla until combined.
2In a small bowl, whisk together flour, baking powder and salt. Gradually add dry ingredients; beat on low speed until just combined, 2 to 3 minutes. Fold in chopped apples.
3Pour batter into a greased 9-in. springform pan; sprinkle with remaining sugar. Bake until cake is golden brown, and a toothpick inserted in the center comes out clean, 50 to 55 minutes. Remove from oven; let cool on wire rack.
4Run a knife around the edge of the cake; remove sides of pan. Sprinkle with powdered sugar. Slice and serve.
