Four cups of cooked and drained sweet potatoes
Two cups of sugar
Two eggs
One teaspoon of salt
Two cups sweet milk
One cup coconut
Two teaspoons vanilla
Combine all ingredients and mix well. Bake for 45 minutes at 350 degrees.
Topping:
One 18-ounce jar of Maraschino cherries, using the juice
One small can crushed pineapple
One cup sugar
One-half cup chopped pecans
One tablespoon cornstarch
Combine ingredients and cook on medium heat until mixture thickens, stirring frequently to prevent sticking. Pour over baked potato mixture in baking dish.
