Sriracha Salmon Tacos

Ingredients:

1 package Sea Cuisine Sweet Sriracha Rubbed Salmon Skewers
3 to 6 flour or corn tortillas
1 c. cole slaw mix
1/4 c. fresh cilantro, chopped
1/4 c. mayo
2 Tbsp. shredded carrots
1 Tbsp. lime juice
1 tsp. honey
1 Tbsp. chopped peanuts
1 Tbsp. fresh cilantro, chopped

Method:

1. Prepare salmon skewers according to package instructions.
2. While salmon is grilling, in a medium mixing bowl combine cole slaw mix, cilantro, mayo, shredded carrots, lime juice, and honey. Mix well.
3. Assemble tacos using 1 to 2 tortillas per taco.
4. Fill with 1 salmon skewer and 1/3 c. cole slaw; top with chopped peanuts and additional fresh cilantro as desired.
