Let cook until temperature reaches 235°, about 12 to 13 minutes. Remove from heat; add butter; without stirring, let sit 5 minutes. Use a hand mixer to beat mixture at medium speed until mixture is thick and light in color, about 5 minutes. Immediately transfer to loaf pan. Cover; refrigerate until fudge is set, about 2 hours.
3Use edges of parchment paper to transfer fudge to a cutting board. Cut into 1-in. squares.
