Apple Salad With Tangy Citrus Dressing (Diabetic)

Ingredients:

1/3 cup unsweetened orange juice
2 teaspoons cornstarch
1 teaspoon sugar
1 large (3-inch diameter) Granny Smith apple
1 large (3-inch diameter) Red Delicious apple
1/4 cup Ocean Spray Reduced Sugar Craisins

Method:

Combine orange juice, cornstarch, and sugar in a small saucepan over medium heat
with a whisk. Stirring constantly, bring to a low boil and cook until sauce thickens, about 2 minutes. Remove from heat and allow to cool to room temperature. Core both apples and dice; you should have approximately 2 cups. Place apple pieces and Craisins
into a small salad bowl. Pour cooled dressing over top, stir well to combine. Serve immediately or chill before serving.
