Makes 4 servings
2 peaches, cut in half, pit removed
2 tomatoes, cut in half
4 tsp extra virgin olive oil
3 tbsp crumbled blue cheese
4 tsp maple syrup, honey, or good balsamic vinegar
Drizzle the cut side of the peaches and tomatoes with a little olive oil and place cut side down for about 2 minutes on a hot grill. Flip them over, top with the blue cheese and grill them for an additional 2 minutes. Drizzle with maple syrup, honey or balsamic vinegar.
Peaches have 19% of your vitamin C for the day, 11% of your vitamin A, and 10% of your potassium. If I end up with some peaches that are not really fully ripe, I like
to throw them on the grill, letting the flame do the necessary “ripening.” This is great as an appetizer or served alongside lean grilled meats and a salad. By simply grilling them up with a little bit of oil, tangy blue cheese and sweet tomatoes, you can have a tasty, easy and, most importantly, healthy side dish!
