Makes 4-6 servings
4 tbsp cashew butter
3 cloves garlic, chopped
3 tbsp chopped, fresh ginger
2 tbsp toasted sesame oil
3 tbsp rice vinegar
1 tbsp soy sauce
1 tbsp honey
3 tbsp ground flaxseed
1 tsp hot sauce (or more according to your taste)
3/4 cup sliced scallions
1/4 cup sesame seeds for topping
8 oz linguine, cooked
1/2 cup of water (Modify the amount of water to blend the sauce to your desired
consistency)
In a blender or food processor, blend together the cashews, butter, garlic, ginger, sesame oil, vinegar, soy sauce, honey, flaxseed and water until smooth and creamy. In a large bowl, toss the sauce with the scallions and linguine and sprinkle with sesame seeds. Enjoy!
