2 tablespoons roasted garlic hummus or plain hummus
2 slices whole grain bread
1/8 teaspoon pepper
1 lettuce leaf
3 ounces thinly sliced, roasted turkey breast
1/4 cup thinly sliced cucumber
1/4 cup thinly sliced red bell pepper strips
1. Spread hummus on one side of each bread slice. Lightly sprinkle with pepper. Place lettuce leaf, turkey breast, cucumber and pepper on top of one slice. Top with remaining bread, hummus side down. Cut in half.
