1 French baguette, cut into quarter-inch slices
2+2 tablespoons of olive oil
1/2 teaspoon of salt
1 tablespoon of minced garlic
1 cup of fresh diced tomato
3 tablespoons of minced purple onion
1/4 cup of finely chopped kale
1/2 cup of drained and rinsed white beans
Drizzle baguette slices with half of the olive oil
Put them into a preheated 350-degree oven and bake until edges are golden brown and the baguette is crispy.
Toss together remaining ingredients in a bowl and refrigerate until ready to serve. Spoon some of the bruschetta mixture onto each baguette slice.
