6 Cubed Medium Red Potatoes, skin on
3 Andouille Sausages, skin removed, cubed
¼Red Onion
1 Crushed Garlic
1 stalk sliced Celery
6 Baby Carrots, shredded
1 Bay Leaf
4-5 Allspice
⅛ tsp Paprika
3 cups Water or Chicken Stock
Salt, to taste
Fresh Ground Pepper, to taste
½ cup Cream
1 cup Skim Milk
1 cup Instant Mashed Potatoes
½ cup Parmesan Cheese
Bread Crumbs
Put in all ingredients except cream, milk and instant potatoes into pressure cooker and set at vegetable or soup (make sure the water level is correct for your cooker).
When finished allow to depressurize & remove lid, set cooker to meat add milk and cream and allow to boil, lid off. Add instant potatoes, allow to thicken (you can add flour & water mix if it's not thick enough). When it is ready, sprinkle some cheese and bread crumbs into each bowl.
