10 to 14 diced medium-sized
potatoes, peeled
2 to 3 cups diced celery
2 to 3 medium onions, diced
flour
salt and pepper
1 lb. beef or pork sausage
Add all ingredients together except save 1 cup onion.
Put in large microwave proof bowl. Cover with water. Cook
until nearly tender. While potatoes are cooking, slice and
flour sausage patties. Put into skillet and fry until browned.
Remove drippings and add to potato mixture. Pour water over
sausage to steam done. After sausage is done cooking, add
leftover water to potato soup. Continue cooking potatoes until
thickened. Salt and pepper to taste. May add some crumbled
sausage from patties to soup. Use the 1 cup leftover onions to add
to soup when served if desired. If thicker soup is desired, add
flour and milk to soup after potatoes are tender.
