1 lb. raw chicken breast, cubed
2 c. red potatoes, cubed
2 small zucchini, cubed
1 yellow pepper, cubed
1 small eggplant, cubed
1/2 c. pitted kalamata olives
For dressing:
1/2 c. olive oil
2 Tbsp. lemon juice
1 Tbsp. oregano
1 Tbsp. minced dried onion
1 tsp. garlic
1 tsp. kosher salt
1/4 c. crumbled feta cheese
1. Preheat oven to 400 degrees.
2. Line a large rimmed baking sheet with foil.
3. Arrange chicken and veggies on baking sheet.
4. Combine ingredients for dressing and whisk well; pour over chicken and veggies on baking sheet.
5. Bake for 20-25 minutes or until potatoes are tender.
6. Remove from oven and sprinkle with feta cheese before serving.
