1 1/3 cups water
1 clove garlic
1/3 cup quick grits
1 tablespoon cold butter or margarine
1 tablespoon Parmesan cheese
1/4 teaspoon salt
1 cup coarsely grated sharp Cheddar cheese
1 large cold egg
Preheat oven to 350 degrees. Lightly grease small baking dish, 3 to 4 cup
capacity. Measure water into medium saucepan. While water comes to a boil,
mash garlic clove and add. Slowly stir grits into boiling water; Return to
boiling; reduce heat to medium-low; cook for 4 minutes. Remove from heat.
Mixture will look watery. Whisk in butter, Parmesan cheese, salt and Cheddar
cheese. Whisk in egg. Pour into prepared dish. Bake until just set in
center, 25 to 30 minutes.
