1 and 1/2 c. all purpose flour
2 Tbsp. sugar
3 tsp. baking powder
3/4 tsp. cinnamon
3/4 tsp. pumpkin pie spice
1 and 1/3 c. milk
1/2 c. pumpkin puree
1 egg
1 Tbsp. oil
For cheesecake filling:
1 (8 oz.) package cream cheese
1/4 c. sour cream
1/4 c. maple syrup
1. Combine flour, sugar, baking powder, and spices in a large mixing bowl.
2. In a separate bowl, combine milk, pumpkin puree, egg, and oil.
3. Pour pumpkin mixture into flour mixture and stir until just combined.
4. Pour by 1/3 cup onto hot griddle.
5. Prepare cheesecake filling by whipping cream cheese, sour cream, and maple syrup.
6. Layer pancakes with cheesecake filling.
7. Top with pecans and maple syrup.
