For the topping:
1/2 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/2 cup light brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
salt, to taste
1/3 cup unsalted butter, cold, cut into small pieces
For the apples:
3 tablespoons butter, melted
2 tablespoons all-purpose flour
1 tablespoon lemon juice
3 tablespoons milk
1/2 teaspoon vanilla extract
1/4 cup light brown sugar
1/2 teaspoon ground cinnamon
salt, to taste
3-4 large Granny Smith apples, peeled and thinly sliced
vanilla ice cream, optional, for serving
caramel sauce, optional, for serving
1 Preheat the oven to 375 degrees F.
2 In a medium-sized bowl, combine the flour, rolled oats, brown sugar, baking powder, cinnamon, salt, and cold butter together, using a fork or pastry blender. The mixture should resemble small crumbs.
3 Set aside in the fridge to remain cool while you prepare the apples.
4 In a small bowl, combine the melted butter and flour until well blended.
5 Add the lemon juice, milk, and vanilla and stir well.
6 Stir in the brown sugar, cinnamon, and salt.
7 Pour the butter mixture over the apples and toss to coat.
8 Pour the apple mixture into an 8x8-inch baking dish and spread into an even layer.
9 Sprinkle the crumb topping evenly over the apples.
10 Bake until the top is golden brown and set, about 30 to 35 minutes.
11 Remove the apple crisp from the oven and allow it to cool for at least 10 minutes before serving.
12 Serve warm with ice cream and caramel sauce!!
