Happy Holiday Pumpkin Pie (Diabetic)

Ingredients:

1 Prepared Pie Crust
Filling:
1-15 oz. Can Pumpkin Puree
3/4 Cup SPLENDA? Granular
2 Tbsp. Corn Starch
1/2 tsp. Ground Cinnamon
1 1/2 tsp. Pumpkin Pie Spice
1/8 tsp. Salt
1/2 Cup Fat Free Half & Half
1/2 Cup Egg Substitute
3 Tbsp. Heavy Cream
1 Tbsp. Pure Vanilla Extract

Method:

1. Preheat oven to 400 degrees F.
2. Blend pumpkin puree, SPLENDA?, cornstarch, spices, and salt in a medium sized mixing bowl . Mix until all ingredients are well blended Add remaining ingredients and mix well.
3. Pour into prepared pie crust. Bake 35 to 40 minutes or until set in the center and the crust is golden brown.
