For the Cookie Crust
1/2 cup unsalted butter at room temperature
1/2 cup granulated sugar
1 cup packed brown sugar
1 cup creamy peanut butter
2 large eggs
1 tsp. vanilla extract
1/2 tsp. salt
1/2 tsp. baking soda
2 cups all purpose flour
1 cup quick cooking oats
2 Tbsp. milk
1 cup chocolate chips
1 cup M&M's candies divided
For the Cheesecake
28 oz. package cream cheese at room temperature
1/2 cup granulated sugar
4ounces semisweet baking chocolate melted
2 large eggs
1. Preheat oven to 350°F. Line a 9x13-inch baking pan with aluminum foil and spray it with nonstick baking spray.
For the Cookie Crust:
1. Beat the butter and sugars until light and fluffy.
2. Add the peanut butter and beat until creamy.
3. Add the eggs and vanilla and beat again.
4. Stir together the salt, baking soda, flour, and oats in a bowl. Slowly add the dry ingredients to the butter mixture and beat until incorporated.
5. Add the milk and beat again.
6. Stir in the chocolate chips and 3/4 c. M&M's candies by hand.
7. Press half the cookie dough into the bottom of the prepared pan. Set aside; reserve remaining dough.
For the Cheesecake:
1. Beat the cream cheese until creamy.
2. Add the granulated sugar and beat until smooth.
3. Add the melted chocolate and beat until creamy.
4. Add the eggs one at a time, beating well after each addition. Make sure the eggs are fully incorporated, but do not overbeat the batter.
5. Spread the cheesecake batter over the cookie dough in the pan. Crumble the remaining cookie dough over the cheesecake batter.
6. Sprinkle the remaining M&M's on top.
7. Bake for 35 to 40 minutes.
8. Remove the pan from the oven and place it on a wire rack for 1 hour, then refrigerate for 4 hours or until completely chilled.
9. Cut it into 24 bars before serving.
