1 bag (16 ounce) fresh spinach leaves
1/4 red onion, thinly sliced
2 tablespoons crumbled blue cheese
1 can (16 ounce) pear slices, drained
1/4 cup vegetable oil
3 tablespoons balsamic vinegar
Salt and pepper, to taste
Toss the spinach, onion, blue cheese and pear slices in a large salad bowl.
Heat the oil and vinegar in a small saucepan over a medium heat until the
mixture is just steaming. Pour over the salad and toss until the spinach wilts slightly. Season with salt and pepper to taste and serve immediately.
