For the biscuits:
3 cups baking mix, such as Bisquick
3/4 cup whole milk, plus more, to taste
2 1/2 tablespoons granulated sugar
2 teaspoons ground cinnamon
For the optional glaze:
2 tablespoons whipping cream, plus more, to taste
1 cup powdered sugar, sifted, plus more, to taste
1/2 teaspoon vanilla extract
Step 1 - Preheat the oven to 425 degrees F.
Step 2 - In a large bowl, add the biscuit mix, 3/4 cup of the milk, the sugar, and the cinnamon and mix until combined, taking care not to overmix.
Step 3 - If the mixture seems too dry, add the extra milk, a little at a time.
Step 4 - Using a large cookie scoop or ice cream scoop, scoop out equal portions of the dough and drop the biscuits onto a baking sheet or a large skillet, about 1-2 inches apart.
Step 5 - Bake until the biscuits turn golden-brown, about 12 to 15 minutes.
Step 6 - In a medium mixing bowl, add 2 tablespoons of the whipping cream, 1 cup of the powdered sugar, and the vanilla and whisk to combine.
Step 7 -If the frosting seems too thick, add the extra cream, a little at a time. If it seems too thin, add the extra powdered sugar, a little at a time.
Step 8 - Drizzle the glaze over the warm biscuits.
Step 9 - Serve warm.
