1 cup honey
1 1/2 teaspoons red pepper flakes, crushed
1. Place honey and red pepper in a double boiler with water in bottom. Bring water to a boil, and bring honey to 185°F (85°C) and keep at 185°F (85°C) for 10 minutes. Remove from heat and let stand 10 minutes. Strain (if desired) while still warm. Place in sterilized jar and cap.
This spicy hot red pepper-infused honey is easy to make, and would make a lovely homemade gift for a "pepperhead".
Makes 1/2 pint (1 cup).
