3 tablespoons butter
3 tablespoons maple syrup
1 tablespoon Dijon mustard
1 medium lemon (juiced)
1 garlic clove, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
4 salmon fillets (4 ounces each)
1. Preheat air fryer to 400 degrees.
Meanwhile, in a small saucepan melt butter over medium-high heat. Add maple syrup, mustard, lemon juice and minced garlic. Reduce heat and simmer until mixture thickens slightly, 2 to 3 minutes. Remove from heat; set aside.
Drizzle olive oil over salmon and sprinkle with salt and pepper. Place fish in a single layer in air fryer basket. Cook until fish is lightly browned and just beginning to flake easily with a fork, 5 to 7 minutes. Drizzle with sauce right before serving.
Being landlocked in the Midwest, my kids always thought they disliked fish. This air-fryer salmon dish definitely changed their minds! I cook it on the grill a lot in the summer months, but found that it is just as tasty and more convenient in the air fryer, especially on those busy days!
