1/2 cup finely chopped green sweet pepper
1/3 cup rice vinegar
3 tablespoons vegetable oil
1 fresh Anaheim or jalapeño chile pepper, seeded and finely chopped
1 clove garlic, minced
1/2 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1. In a screw-top jar combine green pepperm, rice vinegar, oil, Anaheim or jalapeño chile pepper, garlic, sugar, salt and pepper. Cover and shake well. Refrigerate until ready to use.
Makes about 1 cup.
A sassy dressing that is wonderful on salad greens and vegetable salads.
