Raspberry Honey Dressing

Ingredients:

12 ounces Raspberries, frozen, thawed
2 Tablespoons Water
2 teaspoons Lemon juice
2 Tablespoons Sugar
1/2 Tablespoons Sur-gel pregelantinize starch
1/4 cup Red wine vinegar
1 dash Salt and white pepper
2 Tablespoons Honey

Method:

Take raspberries and place into a saucepan. Heat the raspberries and break
and mash them until a pur?e. Add vinegar, lemon juice and awate rand continue to heat for three minutes (do not boil). Remove from the heat and strain the seeds out. Place the pur?e in a mixing bowl and set aside. Place the sugar and sur-gel in a small bowl and mix well. With a wire whip, start to slowly add the sugar and sur-gel mixture into the pur?e. Continue to whip until you have added all of the mixture. Add the honey and season to taste with the salt and pepper. Small adjustments for your taste may be needed.
