1 lb. fingerling potatoes
2 Tbsp. olive oil
2 tsp. lemon juice
1/2 tsp. kosher salt
3 Tbsp. grated Parmesan cheese
1. Toss potatoes in olive oil, 1 tsp. lemon juice, and 1/2 tsp. kosher salt.
2. Spread in a single layer on a rimmed baking sheet.
3. Roast 20 minutes at 400 degrees.
4. Remove from oven and sprinkle with additional 1 tsp. lemon juice and 3 Tbsp. Parmesan cheese.
