2 cups thin sliced bok choy
2 cups spinach leaves
2/3 cup chopped banana
1/4 cup chopped green onion
1/4 cups roasted pumpkin seeds or chopped cashews
1/4 cup shredded carrots of thinly sliced red bell pepper
Dressing
1/2 cup rice wine vinegar
1 cup vegetable oil
1/2 cup diced banana
2 Tbsp fresh minced ginger
1/2 tsp cayenne pepper
2 teaspoons honey
TT salt and pepper
Put all dressing ingredients into a bowl and mash 1/2 cup diced bananas with a fork.
Wisk together dressing vigorously until all ingredients remain incorporated. Toss together bok choy spinach bananas and green onions. Toss with vinegarette. Top with seeds or nuts and carrots or bell peppers. Another great addition would be some grilled fatty fish or a grilled chicken breast.
