German Potato Salad

Ingredients:

5 lb. potatoes
1 large onion, finely chopped
2 medium kosher dill pickles
6 slices bacon, diced and
fried crisp
1 teaspoon salt
1 teaspoon pepper
1 beef bouillon cube
1/2 cup vegetable oil
1/4 cup cider vinegar
1/2 cup water

Method:

Boil unpeeled potatoes until tender. Let cool until you
can handle them. Peel and slice thin. Add onion, pickles,
pepper, salt and drained crispy bacon. Dissolve bouillon cube
in 1/2 cup hot water and pour over potatoes. Combine vinegar
and oil; pour over potatoes. Mix all ingredients well and
place in refrigerator until chilled.
