Green Bean Salad With Toasted Walnuts

Ingredients:

2 tablespoons red wine vinegar
1 shallot, minced
1 teaspoon chopped fresh thyme
Salt and pepper to taste
1/4 cup olive oil
2 cans (14.5 ounces each) whole green beans, drained
1 head frise? lettuce, washed and torn into bite-sized pieces
1 small red onion, thinly sliced
4 tablespoons toasted walnuts
4 teaspoons crumbled blue cheese

Method:

Mix the vinegar, shallot, thyme, salt, pepper and olive oil with a whisk
until combined. Put the beans, frise? lettuce, and onion in a large bowl. Pour the vinaigrette over the salad ingredients and toss gently.
Divide the salad among four plates, and garnish each with a tablespoon of
walnuts and a teaspoon of blue cheese.
