Shrimp remoulade salad

Ingredients:

10 oz Mixed Greens
2 Hard Boiled Eggs (Diced)
12 Grape Tomatoes
8 oz Remoulade Dressing (Recipe Below)
For the Dressing
5 oz mayo
2 oz Spicy Mustard, creole preferred
1 oz apple cider vinegar
1 tsp capers
salt and pepper to taste

Method:

Whisk all ingredients together.
For the salad
Wash, rinse and spin dry the greens. Add diced egg and tomatoes. Add dressing and
toss to coat all ingredients. Split between two bowls and enjoy.
