For the casserole:
1 (14-16 ounce) loaf sourdough or French bread, cut into chunks
8 large eggs
2 1/2 cups milk
1/2 cup heavy cream
2 cups FunfettiĀ® cake mix
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
5 tablespoons multicolored sprinkles
For the topping:
1 cup Funfetti cake mix
1 stick salted butter, cut into pieces
icing or frosting, optional, to taste, of your choice, for serving
Step 1 - Grease a 9x13-inch casserole dish.
Step 2 - In a large bowl, add the bread chunks.
Step 3 - In a separate large bowl, add the eggs, the milk, the heavy cream, 2 cups of the cake mix, the cinnamon, and the vanilla extract and whisk to combine.
Step 4 - Pour the egg mixture over the bread chunks and gently stir to combine.
Step 5 - Pour the bread mixture into the prepared casserole dish and spread it out evenly.
Step 6 - Spread the sprinkles evenly over the top of the bread mixture.
Step 7 - Cover the casserole dish and chill it for at least 8 hours and up to overnight.
Step 8 - Preheat the oven to 350 degrees F.
Step 9 - Uncover the casserole and bake for 25 to 30 minutes.
Step 10 - In a bowl, add the remaining cake mix and the butter and mix to combine until a crumbly mixture forms.
Step 11 - Sprinkle the crumbly mixture on top of the casserole and bake until the casserole and the topping are cooked through, about 10 to 25 minutes.
Step 12 - Serve the casserole warm with the icing.
