1 (14-ounce) can sweetened condensed milk
2 tablespoons lemon juice
2 (8-ounce) cans crushed pineapple, well-drained
1 (20-ounce) can pineapple tidbits, well-drained
1 cup pecans, chopped
1 cup sweetened shredded coconut
2 (8-ounce) containers frozen whipped topping, thawed
1 (9-inch) prepared graham cracker crust
2 tablespoons coconut, toasted
6-8 maraschino cherries
Step 1 Using a hand-held electric mixer, combine the sweetened condensed milk and lemon juice in a large bowl. Mix until it is slightly thickened.
Step 2 Then add in the crushed pineapple, pineapple tidbits, 3/4 cup of the pecans, and the shredded coconut, mixing until fully combined.
Step 3 Fold in 8 ounces of the thawed whipped topping.
Step 4 Pour the mixture into the prepared crust and smooth over evenly.
Step 5 Cover and refrigerate for 4 to 6 hours, or until well chilled.
Step 6 Before serving, top with the remaining 8 ounces of thawed whipped topping and garnish with the 2 tablespoons of toasted coconut, the remaining 1/4 cup of pecans, and the maraschino cherries.
Step 7 Serve and enjoy!
