Filling
2 cups sugar
3 T. flour
2 eggs, well beaten
5 1/2 cups coarsely chopped rhubarb
2 - 8" unbaked pie shells
Crumbs
1 cup flour
1/2 cup brown sugar
1/4 cup shortening
1/2 tsp. baking soda
1/2 tsp. baking powder
Combine sugar, flour and eggs. Fold in chopped rhubarb. Spoon mixture into 2
unbaked pie shells. To prepare crumbs, combine all ingredients and mix well.
Sprinkle evenly over rhubarb. Bake at 400 degrees for 10 minutes; reduce heat to 350? and bake 40 to 50 more minutes
