1/2 cup of chopped, uncooked bacon
1 yellow onion, thinly sliced
2 sweet potatoes, very thinly sliced
2 tablespoons of butter
1 tablespoon of olive oil
1 tablespoon of brown sugar
(to taste) salt and pepper
In a medium to large skillet, sauté bacon and onions until bacon is fully browned and onions are softened. Add butter and olive oil; reduce to medium heat.
Add sweet potatoes and cook until sweet potatoes are tender.
Season with brown sugar, salt and pepper.
Serve immediately.
Recipe serves 4 to 6.
