4 medium potatoes, quartered
2 cups baby carrots
1 stalk celery, cut into 1 pieces
1 onion, quartered
2 1/2 lb. boneless chuck roast
1 can diced tomatoes with herbs
1/2 can water
salt & pepper to taste
place tomatoes, carrots, celery & onions in crock pot.
trim fat & place roast on top.
mix tomatoes & water, pour over roast.
cover & cook on low for 11 to 12hours.
serves 3 to5 people.
