Molten-Chocolate Cake Brownie for One
1 egg
2 heaping tbsp of 100% cocoa powder
2 tsp of raw coconut sugar
1 tsp of coconut flour
2 tsp of organic coconut oil
1 tbsp of semi-sweet dark chocolate chips or chopped dark chocolate (80% cocoa or
dash of baking soda
dash of sea salt
5-7 drops of liquid stevia or a stevia packet (optional)


In a mug, whisk up one egg. Next add in cocoa powder, coconut sugar, coconut four, baking soda, sea salt, chocolate chips.
Mix well to form brownie batter and mix in stevia also.
Melt coconut oil in microwave or over the stove until liquid.
Drizzle and stir in melted coconut oil well.
Place in microwave for just 40-45 seconds (depending on microwave).
Watch for brownie to begin to puff up or souffle and then open the door.
(Do not over cook, or brownie will be dry and chewy.)
It�s ready. Scrape the outsides of the brownie with a knife or fork away from mug. It may be a bit gooey, that�s all part of the decadence.
Dump it out on a plate, and slice into rounds.
You don�t have to share.
