1 (6 ounce) package Wakefield Shrimp
1 (9 inch) pie shell
1 cup half and half
1/2 teaspoon salt
1 (4 ounce) can sliced mushrooms, drained
1 teaspoon chopped chives
1/2 cup grated Swiss cheese
Thaw and drain shrimp well. Beat together the eggs, half and half and seasonings. Place mushrooms and shrimp in bottom of pie shell. Sprinkle with cheese. Add egg mixture and bake at 375 degrees for 35 to 40 minutes, or until center is firm. To prepare quiche ahead, bake 10 minutes less than directed; cool, then wrap and freeze. When ready to use, unwrap and bake at 325 degrees for 25 minutes.
For a delicious Alaska Crab Quiche, substitute 1 (6 ounce) package Wakefield Alaska Crabmeat for the shrimp. Or, in place of 1 cup half and half, use 3/4 cup half and half and 1/4 cup dry sherry.
