Almost Granny's Fried Chicken

Ingredients:

2 cups oil
6 chicken breasts or one chicken, cut into in pieces
2 cups self rising flour
Salt and pepper
1 cup milk, if desired.

Method:

Soak chicken pieces in salted water in large bowl, covered, in refrigerator overnight, or at least 2 hours. Rinse, and pat dry on towel.
In large skillet, heat oil to medium high. In shallow pan, combine flour, salt and pepper, and roll chicken pieces in flour. If you like extra krisp , dip in milk and roll in flour again. Cut heat to medium and place chicken in skillet, leaving space for turning. Fry about seven minutes per side, or till done. Repeat, till all pieces are cooked.
Set oven to 325 degrees and place fried chicken in large baking pan, one layer, and bake 45 minutes. Why? It makes it tender, krisp, and bakes out some of the grease.
